Jerusalem artichoke, also known as Sunchoke or Helianthus tuberosus, is a tuberous perennial plant belonging to the sunflower family (Asteraceae). It is valued for its edible tubers, rich in inulin, a natural prebiotic beneficial for gut health and diabetic-friendly diets.

Jerusalem artichokes are a root vegetable, also known as sunchokes, and they are not a spice. They are a starchy, underground tuber from the sunflower family, characterized by a nutty and slightly sweet flavor. They are consumed like potatoes and other vegetables, and are eaten cooked in various dishes, not as a seasoning. 

In Kashmir region, the crop is gaining attention as a climate-resilient, profitable, and eco-friendly alternative to potatoes.
